Banana Gingerbread


After granting a request for Peanut butter-banana-chocolate chip pancakes this morning, I was still in a baking mood - and realized that I had a couple of overripe bananas left. Fortunately, Amber had just posted about some Banana Gingerbread she had baked, and it sounded interesting enough to try. I added some crystallized ginger to the top, just for an extra ginger kick. Pretty yummy...

Oh, that looks Awesome! You totally trumped my recipe with the crystallized ginger- and to think I had some in my cupboard too. A weird twist here, you using one of MY recipes~ :) Think I'll try that next time!

I feel like such a slacker, I didn't bake a bit, like you and Amber! I did have to work Sunday, in my own defense! That looks totally scruptious!

Great recipe, nice and moist. I was surprised that there are no eggs I made it yesterday, baking it in two small pans to better share it. I substituted yogurt for the buttermilk since I had an abundance of yogurt.
